Muthu's research has focused on a simple objective: to make traditional Indian food more convenient and shelf-stable while retaining the taste, texture and nutritional qualities that make the original food valuable.

Our work spans formulation, food stability, nutrition, preservation technologies and Ready-to-Eat product development.

Ready-to-Cook Foods

Muthu's initial research concentrated on developing a range of traditional foods in convenient Ready-to-Cook formats.

The programme has included products such as Idli, Dosa, Adai, Ven Pongal, Sambar, Rasam, Vatha Kuzhambu, Pesarattu, Bisi Bele Bath and other traditional dishes.

Development has focused particularly on taste, microbial quality, nutritional retention and long-term shelf stability. Selected products have undergone independent laboratory and shelf-life evaluation, including extended stability studies.

This work established the formulation and preservation foundation from which Muthu's current RTE research has developed.

Millet and Nutritional Innovation

Muthu has also explored whether traditional foods can be reformulated around nutritionally interesting ingredients without sacrificing their essential eating characteristics.

One example is the development of a 100% ragi idli, addressing the considerable formulation and texture challenges associated with producing an acceptable idli from millet.

Research into millet-based foods and other nutritionally differentiated traditional products continues.

Ready-to-Eat Foods

The next major research direction is Ready-to-Eat traditional Indian food.

Rather than committing to a single preservation technology, Muthu is evaluating the technology most appropriate for each food. Current areas of investigation include retort processing, freeze-drying and other shelf-stabilisation approaches.

The objective is not merely long shelf life. It is to achieve long shelf life with minimum compromise in taste, texture, aroma and nutritional quality.

Normal Full-Size Freeze-Dried RTE Idli — Experimental

Muthu is developing a shelf-stable, Ready-to-Eat normal full-size idli using freeze-drying technology.

In our initial proof-of-concept trial, an approximately 50 g freshly prepared idli was reduced to approximately 13 g after freeze-drying while retaining its physical structure.

Following rehydration, the idli demonstrated excellent taste and a soft, melt-in-the-mouth texture, while retaining sufficient structural integrity to be eaten normally.

Our market review to date has found commercially available freeze-dried idli-sambar predominantly in mini-idli formats. The successful reconstitution of a normal full-size idli therefore represents a particularly encouraging direction for further research.

Status: Initial proof of concept successful. Further validation in progress.

Future Research

Current and planned research includes:

Freeze-dried foods: Idli, uthappam, masala dosa and other traditional breakfast foods.

Retort RTE foods: Pongal, sambar, traditional rice dishes, gravies and other foods suited to thermal processing.

Millet foods: Development of traditional products using ragi and other millets while preserving desirable sensory characteristics.

Shelf-life science: Understanding and improving the retention of sensory, nutritional and microbiological quality during extended ambient storage.

Packaging: High-barrier packaging, oxygen and moisture control, and packaging systems suitable for domestic distribution and exports.

Nutrition: Investigation of nutrient retention through processing and long-term storage.

Our Research Philosophy

Muthu does not seek to force every traditional food into the same industrial process.

We select and develop the technology around the food, rather than changing the food merely to suit the technology.

Our long-term objective is to combine traditional culinary knowledge with modern food science to make authentic Indian foods convenient, shelf-stable and accessible to consumers in India and around the world.
